I'm using XFCE version 4.12 and Calc version: 5.1.4.2.
I would like to create a pie chart that has data in columns, not in rows, like below. Is it possible? Ideally the part in bold (How have you read them?) would be the title.

I have read them as part of an email:

I have sometimes used the emails and sometimes used the booklet.

I have used the booklet to know which passages to read

I would also like to create a pie chart with the no responses as red and yes responses as green, maybe automatically, but I think this is getting ahead of myself.

What is the different layout that you want? Or am I misunderstanding your data?
Well this is easy enough but probably redundant. Just say it in text: Something like we received 70 yes responses and 11 no. Unless you need the glitz a two part pie chart probably is not going to provide a lot of information though I suppose in some cases it might provide a useful bit of shock value.I would also like to create a pie chart with the no responses as red and yes responses as green, maybe automatically, but I think this is getting ahead of myself.

Yes, I normally would set up my data in that way, but information has been given to me with the label above then the numbers in the next row down! I've added an attachment to explain. I thought it might be easier to learn how to do the chart in a different way, rather than end up copying and pasting information a lot!What is the different layout that you want? If you want Calc to make the chart you'll need to arrange the data as the software expects, not as a table with alternating question/answer rows.
