Though complete when viewed from within Open Office, .odt file properties - title, subject and such - have recently stopped appearing via Explorer in my Lenovo AMD Athlon 64x2 system. When converted to .rtf, .txt or .xml file types, the properties still remain lost. When converted to Word97 .docs, however, the absent fields are suddenly recognized by Explorer and are fully viewable. Then, when converted "back" from .doc to .odt files, the properties again disappear from view as before...
In the past couple of weeks, my operating system has been auto-updated, OOo 2.4 has been uninstalled and Disk Cleanup, Diskeeper Lite and Eusing Registry Cleaner have been run. Also, I downloaded the Beta release again and, moments ago, attempted to use it to "repair" my installation, but to no avail...

Can you remember when it started? When you installed 3.0 or after an OS update or any specific action? It may be a bug introduced by the beta version. In this case, it should be reported, see here: [Tutorial] Reporting bugs or suggestions.
LibreOffice 25.2 on Linux Mint Debian Edition (LMDE 7 Gigi) and 24.8 portable on Windows 11.

I've been using the same Beta since May 7, until "repairing" today (version 3.0.9301 now). Until approximately two weeks ago, this issue did not exist for me. I use the title and subject fields with Explorer to sort and find archived files, but I don't go looking every day, which is why I cannot be more certain about when the problem actually began...
This update occurred on Friday, June 20, and is the only Windows update within nine days either direction of the approximate start of this issue. OpenOffice 2.2 was uninstalled on-or-about the same date. System maintenance was performed subsequent to noticing the issue, and I removed and reestablished the .odt file type from XP as well...
FYI #1 -- Properties values entered via Explorer adhere and can be managed as expected; however, these "new" values do not replace those established and still viewable from within OpenOffice. In other words, there now appears to be two independent properties sets for each .odt file...
FYI #2 -- I noodled around the bugs for the past few months but didn't see anything similar to this...
