I would like to convert all of the bullets in a document to dashes. I've been able to select all, and convert to one type of bullet, but I don't see the dash as a bullet form. To get the dashes that I want I type
- text[enter]
thanks,

Format > Bullets & Numbering > Options > Level: 1-10, Numbering type: Bullet, Character style: None. Click the "Character: ..." button and choose whatever character you want.
When choosing a bullet character, it's a good idea to switch the font to whatever your text is using. Otherwise, OOo may use some oddball font for the bullets, which can lead to surprises down the road.
A plain text hyphen is up at the top of the character grid; longer dashes are under the "General Punctuation" category.
If all your bullet points are part of the same list, you can just put the cursor in any item and make the change. You can see this if you click to the left of any bullet; Writer will highlight all the bullets that belong to the same list.

Thanks!
I just did "select all" and followed the bullets and numbering rabbit trail. Now I just have to delete the extra dashes in between different list groups.
