Welcome beginner. Please answer all of the questions below which may provide information necessary to answer your question.
-----------------------------------------------------------------------------------------------------------
Which version of OpenOffice.org are you using? 3.2.1
What Operating System (version) are you using? XP Home
What is your question or comment?

I see that when saving files as microsoft office files, the most current option is 97/2000. I am using Office 2003 and would like not to loose ant information, formatting or otherwise, if I save from OOo to Office. What, if any, issues exist in saving files as Office 97/2000 relative to Office 2003 from OOo?

I don't know why the "Office 2003" option is in there. The last time I looked, a great deal of text formatting was lost if you saved to that format, even though it appears to be newer. You can check for yourself, but I've seen at least one report that Office 2003 won't even open files saved by OOo in "Office 2003 XML" format.

You must save your work as ODF (Open Document Format--Text Document--.odt) in order to be certain all your formatting is saved correctly and can be re-loaded the next time you want to work on it.

The "MS Word 97/2000/XP (.doc)" file format is the most capable and widely accepted alternative format.

If you need a copy as .doc, I recommend you save it twice: once as ODF and once as .doc. Keep the ODF file as your master document.
