You change the default font for Writer in Tools - Options - Writer - Basic Fonts. All new documents will then have that default font. Existing documents won't change.
Does this help you?

When you create a document from a template, the template supplies the Default paragraph style and paragraphs will use that style until you change to a different paragraph style. In any case, the paragraph style specifies the font. When you want to set a default font, you create a template which has it's Default paragraph style's font set to that. Then you make that template the default template for Writer.

The concept of a style is fundamental to Writer. It will be difficult to use Writer without understanding how styles work. A template is also an important concept for Writer. The Writer manual explains these subjects in detail.

OpenOffice User Guides (PDF)

Open a document. Use File → Properties to determine if it used a template. If so, either change the Default paragraph style in that template, or create a new template with the desired font in Default paragraph style and then use that as the template to open documents (File → New → Templates and Documents). In the image below, I created template Writer_.ott and then told Writer that its default template is Writer_.ott. If you don't understand this paragraph, read the links above.

If you need any additional assistance attach a document demonstrating the situation (remove confidential information then use Post Reply, not Quick Reply, and don't attach a picture instead of the document itself). I will not help further unless you attach your Writer document.

If this solved your problem please go to your first post use the Edit ✏️ button and add [Solved] to the start of the Subject field. Select the green checkmark icon at the same time.
