Hi and welcome to the forum!
In case of deletion, this applies:
[Solved] Recovery of deleted files. But for replacement, I'm not sure you can do very much. Not sure if files are overwritten at the same place or if it uses another location and the recovery tools can still have a chance.
Check the backup folder (see
[Tutorial] The OpenOffice user profile). I guess there is no restore point before the replacement.

You can configure most operating systems to preserve
a series of backup copies as you make changes to a document. If you need help with that configuration, consult your
Windows documentation. If you didn't do that, you can configure OpenOffice to save
one copy when you change a document.

If you didn't do that either you can read these discussions.
Overcopied a document
Overwrote a file but original text is in cache somewhere
If you didn't tell Windows or OpenOffice to make a backup for you, then your data is probably not recoverable after you overwrite it.
If this solved your problem please go to your first post use the Edit ✏️ button and add [Solved] to the start of the Subject field. Select the green checkmark icon at the same time.
