I am filling out a form online that has a table with multiple input boxes. In one single input box the text appears gray. I tried changing the font color but it doesn't work. All the other boxes show the input text in black. Any ideas would be welcome. I also have this same problem on LibreOffice.

I assume that you are doing that in a browser window. The formatting of web pages, especially fonts and colors, is controlled by the developer of the website, and you only have limited possibilities to modify that in your browser options. All of that has nothing to do with Apache OpenOffice, or LibreOffice or any other word processor.
If you are
designing a form, it's another matter. In that case, you have to change the font in design mode, using the control properties panel.

I was sent this form by another user who created it using WORD on a MAC. It was not copied from any website. It is not a PDF. As I am not the designer I will ask the user to correct it. Thank you for the information.

Please keep in mind that Word and Writer mare not very compatible when it comes to advanced features like form controls. Expect odd things to happen. If you want to work with forms in AOO Writer, your best option is to have them designed in Writer.

I opened my file in LibreOffice and was able to modify the text in design mode. I am trying to create an input field that is variable in length. I am in the process of searching through the documentation.
