Good day I have completed the following exercise without any problem.
However I would like to repeat this exercise for practice.The only problem is that step 3 is skipped when I try this exercise a second time.
It goes from step 2 to>>The "Chapter Styles” window appears. You will see “Title” and “Subtitle” ,bypassing step 3
This happens even after I have deleted the first exercise attempt from my computer.

Modify and Apply The Title Chapter Style
1.”Type My Pets.
2.Click Format > Styles and Formatting. (The "Styles and Formatting" window appears.)
3.Click Automatic > Chapter Styles. (Click on the in the menu box at the bottom of the Styles and Formatting window . Scroll to and select “Chapter Styles”.
The "Chapter Styles” window appears. You will see “Title” and “Subtitle”. )
4.Right-click Title. A small menu appears.
5.Click Modify. (The "Chapter Style: Title" window appears.)
6.Click the Alignment tab. In the Options section, click Center. (A dot appears before the word “Center”.) Click the Font tab. Click Arial (Font) > Bold ( Typeface) > 24 pt. (Size) > OK. (The “Size” may be specified in percent or in points. To change from percent to points, delete the number in the upper “Size” box and type a number followed by the letters, pt., such as 25pt. To change from points to percent, delete the “Size” number and type a number followed by the percent symbol such as 25%.)
7.Double-click Title. (The words, "My Pets", move to the center.)

It's not a bug, it's a feature
Many users have requested the Styles and formatting window to remember the last configuration. So it has been implemented in OOo 2.3. If you want to go through step 2 again, before closing OOo, select another view than Chapter Styles.
Thanks to add '[Solved]' in your first post title (edit button) if your issue has been fixed.
LibreOffice 25.2 on Linux Mint Debian Edition (LMDE 7 Gigi) and 25.2 portable on Windows 11.

The recipe you gave, which I quoted here, is not entirely accurate. There is no Chapter Styles window. The action in step 3 only serves to filter the (long!) list of available styles, to show smaller subsets that are easier to manage. In this case, you specify that the list should show only the subset of styles that are used with chapter headings. There is no new window--it only changes which styles are shown in the Styles and Formatting window.
As Hagar already mentioned, this is a convenience feature that saves you the trouble of repeating the selection every time you use the Styles and Formatting window.
If at some point you do not see the style you need in the list, you may need to switch to a different subset, or switch to the "All Styles" list, to find the one you want.

and the instructions are verbatim so I guess the tutorial needs amending,but all is good now thanks.
