Am trying to print to Xerox Phaser 5500DX PS
When I print a multipage document, (let's say 5 page document), and I try to print multiple copies:
a) If I set "collate" I get all 5 copies stapled together
b) If I leave "collate" off, I get all of page 1 stapled together, all of page 2 stapled together, etc...
Is there some way to fix this?

What is the behaviour you expect? Reverse order is among the additional options when you hit button "Options..."

Re: Stapling Documents Problem
I want pages 1-5 to print and be stapled together, and end up with 5 separate, stapled copies...each with the 5 pages of the document....
Re: Stapling Documents Problem
Maybe there's something wrong with your printer driver. But honestly, this is something that you should read the printer manual for.

Re: Stapling Documents Problem
I would first export to PDF and print from there. If you have the same problem from Adobe Reader then it probably isn't OpenOffice at fault.
