Hi
I managed somehow to minimize the ribbon (toolbar) in Open Office, but don't know how to achieve what is done im MS Office by "justify" in Home - namely to get words filling the complete line while writing.

To make the formatting toolbar reappear, select the menu View -> Toolbars and click on the Formatting item. If the Standard item is not selected, you probably should click on it also. You may need to restart OpenOffice to see the toolbars.
The best way of applying formatting to paragraphs is not to use the formatting toolbar but to use styles. How to do this depends on what you are trying to do. Do you want all of your standard text, that is, text other than things like headings, to be justified? You should then modify the Text Body paragraph style to be justified and use that style for all your text. If you want only certain paragraphs justified, you should probably define a new style for that purpose. If you describe what you want to justify and how your document is laid out. Someone can give specific instructions.
