Will I lose all my documents for the following reasons!

My software engineer installed Version 10.0.18363 Build 18363 Pro X 64 Windows 10 along with Microsoft Office Pro 2016 which I did not want. (This was an upgrade from Windows 7 Ultimate X 64) Apache Open Office is what I asked my software engineer to install. Instead she installed Microsoft Office Pro., 2016

The key my software engineer installed some of the key vanished. She told me to turn off all my security and download KMS and I will have a new key. What I received was 69 Trojans that I had to clean out of my system.

Just about all of the installed options related to Microsoft Office 2016 no longer function, because I don't have a key.

I downloaded Apache Open office version 4.l.7

My question is, if I uninstall Microsoft Office 2016 will I loose all my documents, or will all my documents remain with Open Office 4.1.7 ??.

Apache Open Office appears to be installed on top of Microsoft Office Pro., 2016

Unless you keep your documents in the MS Office install directory, your documents will remain when you uninstall Office. They are not kept "in MS Office".

You can have both MS Office and Apache OpenOffice installed, but only one can be set as the default program to open particular types of documents. When you install Apache OpenOffice, you will be asked to decide what types of files it should be the default program to open.

Slightly off topic, but I would be looking at getting a different software engineer (if you even really need one, most home users don't), based on the fact that they gave you horrendous advice regarding your security and the fact that they did not fulfill their obligation to you by, not only installing software you didn't ask for, but also by not installing software that you did ask for.
Based on what I have read, I'd be very cautious about the validity of your Windows 10 installation.

You can install as many office suites as your machine can swallow. You can even run them in parallel but you better avoid editing the same file with different software products. No software is installed "on top" of another. Your movie players are installed side by side with your browser(s) and mail program(s). You can open office documents with different programs like you can view movies with different programs, listen to the same music files with different players or do anything on your computer with a suitable program of your choice.
One extremely common misconception is that OpenOffice is an alternative editor for Microsoft Office documments or some "universal file opener". This is 80% true at maximum. OpenOffice is made to edit its own type of document format. Of course it can open MS Office files more or less perfectly. But then you are supposed to continue working in the native document format of the program you are using, just like you would do with any other program.

In my honest opinion, https://libreoffice.org/ is a better alternative than OpenOffice. LibreOffice is the actively developed successor to OpenOffice which as a project fell asleep several years ago.
