When I do a File, Open, the default filetype = "All Files (*.*)"
How can I change this to look for a specific type?
Writer = either *.DOC or text files
Calc = *.XLS or spreadsheets

Try clicking on the drop down arrow to the right in the dialog. At the top of the list click on spreadsheets or text files etc.

Right, you can change it yourself, but you have to change it every time you open a file, there's no way to make the File > Open dialog show *.doc files by default.
The reason for that is that any OOo application can open any type of file. You can be running Calc, and use FIle > Open to open a Writer file. OOo gives no preference to working in one type of file.
It's a little bit different way of thinking, but I find that I'm constantly working with different types of document, and if the open dialog were to default to a specific type of file, it would actually get in my way.
We've discussed this a number of times and there are some alternative ways to open files that can help, but in the end it's a personal choice as to what works best.
