When I enter the @ symbol with characters on either side into a cell, the entry is assumed by OO to be reminiscent of an email address, which in my case, it is not.
The entry automatically receives a darkened background which I do not want.
In some instances, when I click on the affected cell in order to edit, the Google browser pops-up instead.
How do I override this unwanted behavior?

Try /Tools /Autocorrect options : Options tab and uncheck URL recognition.

Workarounds
If you want URL recognition generally but want to block it in specific cases (pseudo URL?) you may enter the respective texts as little formulae generating the wanted display. For example:
If you want to make wrong "recognition" undone under circumstances defined by a syntax that can be given as a RegEx (regular expression), you can use the 'F&R' tool to revert the unwanted procedure.
If you want URL recognition generally but want to block it in specific cases (pseudo URL?) you may enter the respective texts as little formulae generating the wanted display. For example:
