Hi,
When I'm working on documents about 500 pages,
Writter is taking a lot of time to save document in odt format (up to 5 or 6 minutes)
when I exoprt the same document in Word format (.doc) it take only 20seconds...
The time needed to write it in a PDF files is very long (5 more than 5 minutes)
Are there any parameters to modify, to have a fast response with OpenOffice.
(The performances are the same in 2.0.4 or 2.3 issues of OO)

I think you have a problem. My longest document is 284 pages and 75,000 words (nearly all text, few graphics). I can save it in 3 seconds and publish it to PDF in 5 seconds. If your 500 page document contains lots of graphics and tables with lines I would expect it to take longer — maybe a minute or two — but over five minutes is too long unless you're using a Pentium II or Celeron PC.

I too am having problems saving with 2.3.1
On save of a 9 page doc. OOo will take 30 to 40 seconds to complete... really quite frustrating as during save I can't do anything in OOo.
Please advise.

Is there any picture retrieved from the web ? In that case, OOo could try to check if they're still up to date. Check in the Edit>Links dialog if you've something linked to the wen. If so, break the link for each to embed the pics.
You can also try to rename your OOo user profile so that a new one is created (\Documents and settings\<user>\Application data\OpenOffice.org2).
