Random Chinese characters showing up in word
Uploaded text to OO and random Chinese characters showed up throughout the text. How did that happen?

What text did you upload? How did you upload it? From where?
LibreOffice 7.x.x on Arch and Fedora.

LibreOffice 25.2 on Linux Mint Debian Edition (LMDE Faye) and 24.8 portable on Windows 11.

The same thing has happened to me! Windows 7, OO 3.3, a Word document. I had 3 copies of this document, the original being a real Word doc sent from a Mac to my PC, the other two copies I made on my PC and in OO's Word.
Everything was fine. I translated the original doc (the one sent to me in Word on a Mac). My translation was done in OO, saved as Word. I sent it back. It was fine. Months have passed and the client has asked for another copy. I open the document (done in OO and saved as a Word doc) and it's got Chinese characters scattered about. I've checked all copies by opening them in OO and it's the same--even on the original.
It's been a while since I worked with the document, but I believe the Chinese characters are replacing hyphens, underlines, or some other such mark.
Help!
EDIT: SELECT ALL then choosing UK ENG as the language for the whole text did not help. Selecting for the highlighted selection did nothing. And again, the documents were all fine when I was working on them. The only thing that has happened, now that I think about it, is I replaced my HD and so had to reinstall OO--a newer one, I'm guessing.
When I try to replace the Chinese characters with "__" (double underline) I get what looks like Korean symbols. I've never used an Asian language and there are no Asian languages listed on my languages under TOOLS (only UK Eng, US Eng, and Swedish are).

In opening a .doc file in OpenOffice, you have three choices
MS Word 97/2000/Xp
Ms Word 6.0
Microsoft Winword 5
which you can select from the dropdown on / File / Open
It is possible that the automatic filter is picking the first of these. Try the other s in tunr, but do not Save you file until you have a good open, then save it as type .odt and afterwards as Ms Word 97/2000/XP.
As far as I remember, there is some such "Chinese" character problem with the transfer of a file from Word for Mac to OpenOffice (I have no personal experience of this, but that's what my memory tells me).
