I tend to use a lot of tables in my documents, and the 'helpful' floating toolbar drives me nuts. How can I turn it off so it doesn't hover over my copy and block my reading of what I just wrote?

You are probably referring to the "Table" toolbar, i.ie the toolbar that offers all functionality for tables.
You can either dock it by double-clinking its title, or disable it by unchecking View > Toolbars > Table
from the main menu.

Another options is to dock the toolbar on the side of your document and/or top/bottom like other toolbars.
