Can someone please explain how to set up different margins for different pages of a document. For example, I want to create a document where the first page top margin is 2.5 inches and all of the following pages have 1.0 inch top margins.

Insert a page break (Insert /Manual Break /Page break and select a different Page style; you can change margins only by using different page styles, and the chosen margins will apply to all pages using that style.

The page margins are controlled through page styles. To set up what you want, select the menu Format -> Styles and Formatting. This will bring up a small dialog. There are five small icons near the top of the dialog. Click the fourth one from the left to bring up Page Styles. Set the drop down list at the bottom of the dialog to All. Right click on the First Page style and select Modify. On the Page tab you can set the margins. The First Page style has the property that a page following a page with the First Page style will have the Default page style. You can see this listed on the Organizer tab where the Next Style is shown as Default. After editing the First page style, set the cursor in your document somewhere on the first page and double click on First Page in the Styles and Formatting dialog. That style will be applied to the page and you should have the formatting you want. The second page of your document will have the Default style. I would make the boundary between the first and second pages by inserting a page break just after the last text on the first page. You can do this with the menu Insert -> Manual Break -> Page Break.
You can see which Page Style is active in the Status Bar along the bottom of the Writer window. Use View -> Status Bar to make it visible if necessary. The left end of the status bar shows the page number and the next region over shows the Page Style.
