Thank you for patiently preparing this* tutorial. I have found it very helpful.

On slide 19 … / Page layout and numbering / Add page styles. The instructions ask you to "Select the page style category." In the simple_sample.ott template, I am not finding any such category. So I added >Body text to the Custom Styles category. I've attached the finished document

On other slides (26, 35, 40, 41, which should have the style >Body text, that style is not available in the list.

A suggestion, the tutorial does not suggest which of the views (i.e., Hierarchical, All Styles...) of the Styles and Formatting dialog should be used for this learning experience. I think that would be helpful.

That topic is very old - it was created in the year 2013. Maybe the earlier ApacheOO, OracleOO, Openoffice.org versions had such page style by default.
But it is not a problem: if that page style not exist, you can create it. Adjust the properties of the new page style, and use it.
