I would like to start by saying that OO has surprised my many a time with it's abilities. Just last week I received a 'complex' xlsx file which interacted great in OO. Thanks and well done on such a great product!
That being said, I have pulled out many hairs with OO and its autocorrect. I know you can customize it quite extensively, but some things are pretty much one offs.
As far as I understand in forums, you loose all formatting if you turn off autocorrect. I feel this is point number one which can be addressed.
The second is, if I go back and fix an autocorrect, then don't keep on autocorrecting it. If I type "UUh" and OO makes it "Uuh", and I erase only the "u" and retype as a "U", accept that perhaps I intend for it to be that way.
Thanks again guys, and I hope you review this when rolling out future versions.

Greetings and welcome to the community forum!
If you notice an unwanted correction when it happens, just press Ctrl+z (undo). The correction will be undone, leaving just what you typed.
If you only notice the correction later, you can go back and change it. Just be aware that the automatic change will be re-applied if you type a space or other word-ending character after the changed word. Of course, if that happens, then you can use Ctrl+z to undo it.
If you're finding that autocorrect is causing more trouble than it's worth, you can easily toggle it on/off with Format > AutoCorrect > While typing.
If you're running into other automatic changes, just ask. There are several different automatic features and they work differently. Just be specific about what you're typing and what happens and I'm sure we can make some suggestions for dealing with it.

I seems to me it wouldn't be too difficult to apply autocorrect only to newly filled cells, not to cells being edited.

When you edit a cell, you can still make mistakes.

Text language [None] turns off auto-correct for specific cells.
Ctrl+Z undoes the last change including any auto-correct changes.

NO Autocorrect? Only able to turn it off in Write? Numbers reformatted in spreadsheets? This is a nightmare.
Sorry - I've just spent 45 fighting with Autocorrect. CTRL-Z doesn't, at least on my system, undo its woeful 'corrections'. So now I have a mess on my hands because of a tool that was presumably supposed to make work easier.
I've used Open Office since it was Star Office. I prefer open source software. But if I can't turn Autocorrect off, it's useless to me; most of the corrections it makes are either unnecessary (I can spell reasonably well, and I still have a dictionary), or infuriating (my spreadsheets are no longer in the correct format).
Could you - please! - create a one-button toggle for Autocorrect? The current set up leaves it greyed out for anything except text. Spreadsheets thus look prehistoric and require new layouts.

This is a user to user help forum, and there are rarely, if ever, any developers on here (or at least ones that identify themselves as such).
You have made a few statements that run contrary to my own experience and/or the experience relayed by other helpers.
Can you please clarify what you mean by "No Autocorrect"? Do you mean that Autocorrect isn't working? Do you mean that you can't find the commands to turn it off? or something else (if the last, please try to be more specific).
Autocorrect settings, on my Windows system, are under the Tools menu
I know from experience that Mac users have a different menu system, so exactly where it is on your system, I don't know.
If Ctrl+Z isn't undoing a change, it may be that the system has recognized other changes, even if you haven't, in which case you may have to use the Ctrl+Z several times until the change is undone, presuming that there hasn't been enough changes to fill the memory for the Undo command. (It is limited via a setting at Tools -> Options -> OpenOffice -> Memory)
