I want to make a drawing to print on A0 paper, 841 × 1189mm, or on A1 paper, 594 × 841mm.
I go to Format, Page. A0 or A1 is able to be selected, but the width and height are displayed as 300.00mm. I try to edit these manually, but they revert to 300.00mm.
How can I set it up for larger pages than 300mm?

I very much doubt that you want to go down that road. First, the patch isn't accepted yet, so it still has problems. Second, to apply it you have to build OOo from scratch, a process that takes many hours on a typical PC.
Just change your measurement units to 'cm' until the issue is fixed.

I have the same problem.
I have sort of solved it by working in an A4 sized document, and later I hope I can cut it in 4 pieces, make them bigger and then hope the printing company can paste it together before printing ...

That is unnecessary. If you simply change the measurement unit to something other than millimeters, then the problem goes away--you can set the page size to anything up to 3 meters tall or wide. Changing the measurement unit will not change the size of your drawing; the only thing it will change is the labels of any dimension lines.
