Hello, is there a way to create a chart with 3 line ( max - average - min ) and have the area of the min-max greyed to highlight that interval?

I almost never use Calc plots so I am not at all an expert but I doubt it. Maybe you could graph the three lines and use Draw to supply shading?
I would suggest going to a proper scientific graphing package to do this. I am not sure but at a quick guess that plot example you posted may be from gnuplot (Perhaps Pyhton with gnuplot as its graphics component?). See Error on y represented by filledcurve shaded region --scroll to bottom of the page.
It also seems fairly easy to do using the ggplot2 graphing package {with the geom_ribbon() function} in the stats and graphics system R. See the extremely quick and dirty example in the attached file. The lines are parallel simply because that was the easiest way to generate some data.
