[Solved] Saving custom cell alignment for default

Is there a way to save a custom cell alignment as default so one doesn't always have to keep changing it every new spreadsheet without making a 'template' ?

Under 'Format/Cells/Alignment/Text Alignment/Horizontal' change that to 'Center'.

The default format properties are stored in the Default template. You can create a new template, and then you can set it as default.
