My director has very large files in OOo Calc - 5-10 Mb. There are a lot of links between documents.
If he changes data in one document, he is to save it (saving takes up to 1 minute). Only after saving he can renew links from this document in other documents. Is there any method to update data of linking documents without saving linked document (while it is opened in OOo)?

No, sorry. The linking is done through the file and the file isn't up-to-date until it's saved.
The only way around it is to use a database to hold the data, and use the spreadsheet to view it. Then the data are kept up-to-date in the database, where they are available immediately to other programs or spreadsheets.
If you're working with that much data, it probably makes good sense to do it that way anyway, if you can. It's a more robust approach all around.
