Is it possible to create a drop down list in a cell? Instead of entering information in a cell, you would click and a list would drop down, allowing you to select from several choices.

Yes, there are two ways:
1) Data > Validity > Criteria > Allow = Cell Range or List
or
2) Insert a form control:
View > Toolbars > Form Controls; use the toolbar to enter form editing mode. Use the toolbar to add a drop-down list, set it to use a cell range for it's data.
Option 1 is a lot easier; option 2 gives you more control over the appearance and details of the list control. Both Excel and Calc support both options, but neither option is perfectly compatible between the two.
