Spreadsheet displays Jan 1 but when click on it, 'details' display as 01/01/2021

Choose a suitable date format:
Ctrl+1 > Numbers > Date > Format
Ctrl+1 > Numbers > Date > Format

The "details" always provide a more accurate and internationally accepted format for the information displayed.
Jan 1 looks good to you, but the computer has to keep track of the year as well, otherwise it wouldn't know the difference between Jan 1 1900 and Jan 1 2900 (as examples).
You know that Jan 1 is (probably) meant for the current year, but if you were using Calc for bookkeeping purposes (not recommended), an accountant looking over your books wouldn't know if that was Jan 1 of the current year or Jan 1 of a previous year in regards to filing for taxes.

eeigor - Numbers > Date > Format ?? I used: category = date, format = Dec 31 … displays dates correctly in spreadsheet but not in "details"

If you don't like it, as you say, then I can think of three options.
1) Find another spreadsheet program that shows the details as you want. I have no idea as to if this exists or not.
2) Modify the Calc code to handle the details display as you want. I have no idea if you have the knowledge and programming skills to handle this.
3) Suffer with using the program as it is written.
