Is there a way to get the font to lock in the size I choose. Same for locking them left, right, centering choice for cells. When I choose a font size it changes back to 10 when I go to a new cell, same for centering choice.

Use styles! Cell style "Default" in this particular case.
Use templates! Templates are the essence of all office suites. Create a default template of the document with the modified cell style.
