Of course I know about: 'SAVE AS" and "SAVE".
I mean ongoing other changes like spellcheck, page numbers, pictures, etc.
I make the changes and select SAVE but sometimes all of my changes are not saved when I return to my document even though I always click SAVE before closing the document.
Any assistance will be very appreciated.

What specific 'changes' are not being saved? Are you saving your documents in the default type for OpenOffice - e.g. as .odt for Writer documents, .ods for Calc, etc ?

I am so confused, please forgive me.
I do not know where the DEFAULT TYPE is for OpenOffice. If I can find a tab that leads me to the word DEFAULT, if I select it will it save my document? Not clear what you mean, sorry.
It is a TEXT document, which I believe is WRITER mode.
Saved as ODT for writer, yes.
An example is, I start a new title on a new page. Not header, just a title in bold text. Next time that I open the document, the title has moved half way down the page when it was supposed to be at the top.

If you expect a document written in OpenOffice to remain unaltered through Saves, it must be written using the correct methods and saved in OO's native formats (.odt for Writer). This means consistently using Styles. You will find much useful information in
