Edit: Solved. Many thanks for all suggestions. The easiest one seems to be to write an x and then to place a bar from the Symbol fonts before the x.
Does anybody know how to write the symbol x-bar, that is an x with a bar place above the letter. This symbol is used to denote a mean value of something.

On my system I can type an x then place the cursor before the x and insert a "bar" character from the Symbol font. That character is listed just before the lower case alpha. The "bar" appears above the x. If you want to show anything much more complicated than that, you should consider the Math application. It is accessible in writer through Insert -> Object -> Formula

Is it not in Menu > Insert > Special character?

If that refers to my response, then yes, to insert the bar before the x, you use the menu Insert -> Special Character. The reference to Insert -> Object is for inserting a Math object.

Create a character style with Overlining selected. Apply as needed. :)
