I frequently use columns in documents I write using AOO Writer. But sometimes I have second thoughts and want to change the number or remove them altogether. So far the olny way I have found is to copy all the text into a place where there are no columns set, delete the section where the columns are and start over.
Is there an easier way?

Yes thanks. I'd not thought of it that way before, but a two column document is just a sort of giant table.

I misread your question - for columns, you can use Format | Columns to alter the number of columns.
Depending on what you are doing, tables may be a better option.

When you want to use columns on a page but want not on other in a document, then it is better to create and apply different Page Styles.
You can change the properties of the applied Page styles.
If you use the Sections inside a page for a different layout then you must edit it or delete is - when you want to use something other formatting properties.
Right click on the Section - From the appeared Context menu: Edit Section - Options (button) - change the number of the Columns.
(Checked in my Libreofice 6.1.6)

Left click on a section - From the main Menu: Format - Section - Options (button) - change the number of the Columns.
