Previously functional text doc now unreadable

Hello
Students at the school where I work all use Open Office for assignments.
In multiple cases, they will create a text document, save it and then return to it a few weeks later to find multiple pages of this :
is there anything we can do to retrieve these documents ?
or prevent it from happening?
