When installing updates
do I have to delete the previous version ?
are the setup of the previous version automatically saved ?

You don't need to delete a previous version to install an update. Your user settings should also not be impacted.

You can install new versions of OOo over old ones without having to delete anything. Unfortunately changes to your dictionaries are not saved. See here.
