Sending OOo docs to non-OOo people

First time writing-When my wife sends OO documents by email to others who use Windows or Macs they cannot open the documents. She was able to convert some docs to Windows format. I changed the default word processor to OO hoping it would help and now all her docs have converted to OO, I can't see how to convert back, and she's REALLY P-O'd! Any help is appreciated, in the interests of a successful OO experience, and marital tranquility. Thanks

Changing the default program changes only the program. No documents are converted/modified when the default program is changed. They may be described differently, but that difference comes from a change in the operating system, not the document.

When someone sends you a DOC from a Microsoft application open the document and if you are supposed to edit the file:
File>Save As... File Type: "ODF Text Document (.odt)
Now you are editing your own copy of the document in the best suitable file format without touching what has been sent to you.
When you send back some file copy to someone:
File>Send>Email as PDF (for your readers, any system has a PDF reader)
File>Send>Email as Microsoft DOC (for your co-editors if they have to use MS Office).
File>Send>Email as ODF Text sends the file in the standardized file format of this office suite which is well understood by many office applications unless the application is made by Microsoft. MS only supports file formats that are under their control.
A simple double-click on a file always loads the file into one particular application which may not always be the wanted application.
How to open any file with any installed application under the Windows operating system:
1) Right-click the file -> Open With ... and choose the application to use.
2) Having an application icon on the desktop, drag the file icon onto the application icon.
3) Start the application from the start menu or some other application icon.
3a) Call the file-open command of the respective application.
3b) Drag the document icon into the application window
