Open the document, then /File /Save as under a new name. This leaves you with the old document and the new, an exact copy until you edit it.

In Windows, you can copy and paste files in the Open dialog box without having to open the file separately. I don't know if that works on a Mac. It doesn't in the Linux distributions I've tried.

Select the file in Finder then use File → Duplicate. You can rename it (press Enter; type new name; press Enter) if you do not want the system-assigned name for the duplicate of the file. If you're using Finder, you will want to perform the duplication when the file is not open in OpenOffice.
