Saving Doc's

I have scanned a doc and sent it to My Documents file.
When I open it I am unable to edit it
How do I save a doc from my scanner to My Doc file and be
able to add or delete info?

What format did you scan it into?
OpenOffice 4.1.7, LibreOffice 7.0.1.2 on Windows 7 Pro, Ultimate & Windows 10 Home (2004)

Please remember that a scan produce a mere picture, not a text document.
If you want to modify the text, you may use an OCR application but the results are not perfect (several topics here about OCR software).
LibreOffice 7.6.2.1 on Xubuntu 23.10 and 7.6.4.1 portable on Windows 10

Use google drive to have real texts from scanned jpg document.
Google OCR is vert good.
OO 4.1.5 for mac high sierra
