Problems formatting document

I'm in trouble. All I want to do is write a simple academic math paper with a title, chapters and sections. I've been at this for a whole day and not written a single equation. I am really struggling with this software. It seems like every step requires a 15 min visit with Google and docs. I can't control formats. Paragraph Style>option either has no effect or it works on a single word or several paragraphs. Words in the middle of sentences. And every now and then it does what I expect. Chapter headers, section hears - styling? Ha! Rt Click > Paragraph Style > fonts yields a dropdown that terminates at M. There are more fonts. The selector in the main menu bar goes down to WingDings.
I'm an experienced developer. I've written scripts for MS Office products and countless web pages. I do understand the concept of hierarchical document structure and cascading styles. I really am not an idiot but this software has made me feel like one.
I've done the work. Google and forum searches. Docs start in the middle of a subject, without explaining context or point to pages that no longer exist. I can't invest another day or two learning OOw's internal abstract structure and all the complications and bugs that might occur. I just need to write my damn paper.
I can't find a suitable template - the ones that seemed promising are stale links.
