With support stopping for Windows 7, I am considering changing my desktop to LINUX. I have a lot of OpenOffice files on my computer created under Windows 7. Will OO under LINUX be able to read these files?

Yes, without difficulty provided correct fonts are installed. In linux the MS font package is ttf-mscorefonts-installer and should be in your distro's repositories.
