I downloaded OpenOffice last night to a desktop I'm giving my brother for his editing job. I'd hoped it would serve his purpose, but apparently it will not, since he has to submit as .doc or .docx, and the .odt files won't even open in Word. That is why I uninstalled this morning. The installation files remain, though, along with their desktop icon. Is that okay? Are they still taking a lot of space? Will they interfere with Office when I buy it?

The installation files can remain. They will not interfere with MS Office. They are also pointless if he will never use OpenOffice and there is no harm in deleting them.
As for your reasons for deleting OpenOffice:
OpenOffice can save documents in the .doc format.
LibreOffice, a more actively developed fork of OpenOffice, can save documents in the .docx format.
Word has been able to open .odt documents since MS Office 2007.
However, if one has to work exclusively in MS Office formats, it is best to use Office. "Always use native format when possible" is a good rule.
