Removing OpenOffice changes

I downloaded a standard Open Office program to be able to open an "encapseled postscript" file (.eps). I was able to open the .eps file. But now all my other Windows .docs files are Open Office files. When I open them, I now am supposed to work with them according to Open Office. I am not interested in that. I was able to use Windows word files just fine. I deleted Open Office from Programs. But all the files remail. How can I change them back to what they were are still should be?
