New user. When I start open office, I immediately get a blank spreadsheet. I would prefer to get a blank text document on startup. How do I do this?

Drag and drop the Writer button from your Window start menu to the desktop or your desktop toolbar.

I'm confused. I have an OpenOffice button on my desktop (and taskbar). That's what I click on and it opens the spreadsheet. I don't see a writer button anywhere. It seems there should be an easy was such that when I click the OpenOffice button an untitled.odt would open.

If you type 'writer' in your Windows start menu, you should get that icon.
Else, you could tweak the shortcut by adding -writer in the command.
Or go to the program files in /Program files/OpenOffice/...program (don't remember the exact path in Windows) and create a shortcut pointing to swriter.
It is rather strange that it starts with something else than the start center (where you can select what kind of document you want to create).
