My default header makes a date like - 23/05/2013
The "Header Page style: default" box only allows text attributes.
So is it possible to have - 23 May 2013 in the header, and how ?

Sorry but you can't choose a format for the header in Calc.
The format for this field is the default date format of your locale.
There is an bug report since 2003...

At least we can use rows to repeat as headers and format the row how we like.
